食道（咽頭から胃へと食物が通過する筋肉の管）の内側の組織に発生するがん。食道がんには、扁平上皮がん（食道の内側を覆う平らな細胞に発生するがん）および腺がん（粘膜および他の体液を産生し放出する細胞に発生するがん）の2種類がある。
胃および食道は上部消化器系の一部である。
